Dorm room dining: Apple pecan french toast casserole

Ingredients

For the base:

5 pieces of white or french bread torn into cubes

4 eggs

¾ cup milk

¼ cup white sugar

1 spoonful vanilla extract

For the topping:

1 can of apple cinnamon pie filling (or just regular apple pie filling)

¼ cup white sugar

¼ cup brown sugar

2 spoonfuls of ground cinnamon

2 tablespoons melted butter

Crushed pecans (I’m not sure the exact bag size, I’m guessing 16 oz)

Caramel topping

Materials 

Cooking spray

8x8in baking dish (I used this but you can buy disposable ones around that size at Dollar General. It can be a little bigger but I would not recommend trying a smaller pan size.)

A large bowl for mixing (You might need to wash it in between some steps if you don’t want to use more than one bowl for mixing.)

A microwavable smaller bowl for melting the butter

A can opener (I have a can opener but you can buy pie fillings that have a flap to open on top so you don’t need a can opener.)

Any normal spoon for measuring a spoonful

Fork or whisk for mixing

Measuring cups

Microwave (for melting the butter)

Hot pads or small towels to remove from the oven after it bakes

An oven for baking

Recipe

Preheat the oven to 350 degrees and spray the baking dish.

Tear the pieces of bread into cube shapes and arrange them around the bottom of the baking dish.

In the large bowl mix the eggs, milk, white sugar and vanilla extract. Once they are well mixed, pour evenly over the bread cubes.

Open the can of apple pie filling and pour evenly over the bread cubes and egg mixture. You shouldn’t be able to see the bread unless you look through the side of the dish. The apple filling should cover it.

Wash the large bowl to use for the topping mixture. After it is washed, measure out the brown and white sugar and cinnamon into the large bowl, and pour all of the crushed pecans in the bowl.

In the microwave-safe bowl, melt the butter for around 22 to 25 seconds until it is melted then pour the melted butter into the large bowl with the other topping ingredients. 

Mix the topping mixture until it seems well mixed together. Then arrange the topping mixture over the apple filling so that it covers all of the filling. 

Bake in the oven for 1 hour or until it is a medium brown color on top and bubbly. 

Remove from the oven with hot pads or towels if you don’t have hot pads and make sure to put a towel or hot pad underneath the dish while it is still hot. 

Drizzle the top with caramel topping before serving.
