Dorm room dining: KFC copycat bowl casserole

Ingredients

2 cups instant mashed potato mix

1 cup of water for the instant mashed potatoes

1 can of cream style sweet corn

1 bag of shredded Colby & Monterey jack cheese

1 spoonful of garlic powder

1 spoonful of onion powder

Estimated ⅓ powder from a brown gravy package

⅓ cup water for the gravy 

½ stick of salted butter

Bag of fully cooked popcorn chicken (thawed)

4 spoonfuls of BBQ sauce

Cooking spray

Materials

Pot for cooking the gravy and mashed potatoes

Casserole dish around 9inx9in

Can opener

Spoon to measure 

Spatula for mixing

Oven

Hot pads

Directions

Preheat the oven to 450 degrees. 

In a pot, place the half stick of butter on medium-low heat to melt. 

Once it is fully melted, add the 2 cups of instant mashed potatoes, 1 cup of water, 1 spoonful of garlic powder and 1 spoonful of onion powder. Mix until the mashed potatoes have formed and the other powdered ingredients are mixed into the potatoes. 

Spray the casserole dish with the cooking spray. After spraying the dish, remove the pot with potatoes from the stove and using the spatula, scoop out the potatoes into the casserole dish, smoothing it out to form the bottom layer. 

Rinse the pot to be used for the gravy mixture. 

Sprinkle ⅓ of the bag of shredded cheese over the mashed potatoes. 

Using the can opener, open the can of cream sweet corn and pour it on top of the mashed potatoes and shredded cheese. 

Sprinkle ⅓ of the bag of shredded cheese on top of the corn. 

Open the bag of popcorn chicken, making sure it is thawed and not frozen. Begin to uniformly place the popcorn chicken on the top layer of the casserole. You might not use all of the popcorn chicken. 

After putting the chicken on the casserole, begin cooking the gravy by putting the estimated ⅓ amount of powder from the brown gravy package, ⅓ cup of water and 4 spoonfuls of BBQ sauce to the pot. 

Allow the gravy to thicken and get a little bubbly. Once it starts to bubble, pour over the chicken on the casserole, covering all of the casserole. 

Using the last ⅓ of the bag of cheese, sprinkle it over the gravy. 

Place the casserole in the oven uncovered for 45 minutes or until it gets bubbly and the edges are golden. 

After it is finished cooking, remove from the oven using hot pads and place on the stove or on hot pads while it is hot. Serve immediately and enjoy.
